Turkey Stuffed Peppers with Feta Cheese Salad

I love red peppers. They go with almost anything. Stir-fry's, pasta's, salads, omelettes and many other recipes. But one of my favourite things to do with them is to stuff em' up!Lately Ian and I have been having stuffed red peppers with quinoa, courgettes and turkey mince. Eating this with a feta cheese salad tastes delicious.

Turkey Stuffed Peppers with Feta Cheese Salad

Cook time: 5 mins / Prep Time: 30 mins / Total time: 35 mins / Yields: 4 portions / Serving Size: 1 person

Ingredients for stuffed peppers

  • 1/2 cup of quinoa
  • 2/3 cup of water
  • 180g (6.4 oz.) turkey mince
  • 1 small zucchini, grated
  • 2 large red bell peppers, cut open and deseeded
  • 1 clove of garlic, crushed
  • 1/4 cup of fresh rosemary
  • 1 lemon

Ingredients for stuffed peppers

    • 2 cups of mixed salad leaves (rocket and spinach)
    • 8 cherry tomatoes
    • 80g (2.8 oz.) of feta cheese
    • 1 tbsp. of extra virgin olive oil

    Instructions

    1. Rinse the quinoa thoroughly with cold water and then add to a saucepan with 2/3 cup of water. Bring to a boil.
    2. Squeeze lemon juice out of half of the lemon into the saucepan. Once the water is boiling, reduce heat to simmer. Cook for 15-20 minutes, depending on the instructions on your pack.
    3. While the quinoa cooks, prepare the peppers and stuffing mixture. Preheat the oven at 160° (320°F). And place a frying pan on the stove. Add a dash of olive oil and pre-heat the pan.
    4. As the pan warms up, chop the fresh rosemary into little bits and also the garlic
    5. Put the turkey mince in the pan, then the rosemary and garlic. Squeeze the remaining lemon juice onto the turkey. Mix well. Leave to cook at medium heat for a few minutes.
    6. While the turkey mix cooks, grate 1 small courgette and leave in a big bowl
    7. When the quinoa finishes cooking, take it out of the saucepan and drain any excess water. Put the turkey mixture and cooked quinoa into the big bowl that has your grated courgette. Mix all of this well.
    8. Cut and deseed your red peppers. Place on a greased baking sheet. Stuff your peppers with the mixture. And put them in the oven for 15 minutes. Take out when it's cooked, but not burned.
    9. For Salad, mix rocket, tomato and feta cheese. Drizzle olive oil or balsamic vinegar over salad. Serve with the stuffed capsicum.
