Tortilla Tomato & Onion Pizza
Pizza, pizza, pizza. It used to be one of my favourite ways to have junk food. However, after eating natural foods consistently for about two years, I don't quite enjoy pizza takeaways anymore. They make Ian and I bloated, tired and crappy.
The sad thing is, pizza is one of the things I love to enjoy. Just looking at the cheese and pepperoni (or whatever toppings you like) can make your mouth water. I wondered how I could have a healthier version that removes the feeling of being bloated. Am convinced frozen
So I wondered, what if you could make a healthier version that doesn't require dough, too much effort or time, and it removes the feeling of being bloated afterwards?
Searching for good homemade pizza recipes, I came across a delicious looking one by Wallflower Kitchen. Not only does it look amazing, it contains 2 of your 5 a day. Bonus!
So why is this pizza so low in the baddies and rich in the goodies? Well, instead of using a thick dough base, you can use a wholemeal tortilla wrap. This saves you time and is easy to prepare.
By using an Italian arrabiata sauce made from sun-ripened tomatoes and spicy chilli, it's sure to add a bit of twang to your meal. Top it with some bell peppers, courgette, red onion, garlic and basil and you're good to go.
The amazing thing is that this recipe only takes 15 minutes to make. Bye bye complicated pizza.
Vegan Tortilla Vegetable Pizza
Cook time: 15 mins / Prep Time: 10 mins / Total time: 25 mins / Yields: 2 portions / Serving Size: 1 person
- 4 Wholemeal Tortilla
- Tomato and basil pasta sauce
- 1 courgette
- 2 red peppers
- 2 small onions
- 3 large tomatoes
- Chop the vegetables into small pieces and throw in frying pan. Cook for 5 minutes
- Preheat the oven at 120°
- Place tortillas on baking tray / pizza tray
- Cover and spread the tomato and basil pasta sauce over the tortilla... sort of like a pizza base
- Put vegetables on the tortillas and make sure they are spread evenly
- Put the tray of tortillas into the oven and bake for 10-12 minutes.
